The environmental impact of an animal based diet is much greater than that of a plant based one. Allowing for the university to aid in it's aims of reducing it's environmental impact. Furthermore, many other UK and some foreign universities such as Cambridge, Imperial, UCL, Warwick are following suit. A plant based menu allows for greater options. Those who eat meat, vegetarians and vegans can all eat this. Furthermore, if set out correctly, those with certain allergies such as dairy and eggs could feel safe eating it. Lastly, it can also be cheaper, a meal such as a daal which uses lentils instead of a meat for the protein is far cheaper. So it'd mean that the university and students could spend less on catering.
